Rainbow trout is a succulent and firm fish with a meaty like texture; they are native to cold-water tributaries often touted as an excellent alternative to the often-overfished salmon as this colourful patterned fish is a member of the same family.

One of the selling points when it comes to Rainbow Trout is the fact it is a low mercury option labelled a “best choice” by the EPA and FDA giving you peace of mind of what is going into your body.

All trout offer a great source of protein, niacin, vitamin B12, omega 3 fatty acids and your entire amount of Vitamin D for the day. Protein is the building blocks of our body making it vital for growth and development and assists in repairing damaged tissues, another reason to add this beautiful fish to your diet!

Samsung have provided the recipe below, although this can be made using any regular hob, you will be guaranteed great results with one of their Infinite range cooktops to show off your culinary skills and impress your guests at every dinner party. They sit perfectly flush with your worktop for a professional look and will definitely compliment your kitchen.

· 1 rainbow trout (250g)

· 1 red onion

· 2 small carrots

· 1/2 zucchini

· 1 yellow pepper

· 1 red pepper

· 4 red cherry tomatoes

· 4 yellow cherry tomatoes

· 1 green apple

· 6 tablespoons of olive oil / or 8 tablespoons of butter

· 1/3 teaspoon of salt

· 1/3 teaspoon of black pepper

For the vinaigrette:

· 1 teaspoon of mustard

· 1 teaspoon of Worcestershire sauce

· 1/2 teaspoon of sherry vinegar

· 1 tablespoon of hazelnut oil

· 1/3 teaspoon of white pepper

· 1/3 teaspoon of salt

Step 1

Firstly you are going to prep the fish by cutting through it horizontally, running your knife along the bone from the head to the tail. Next it’s off with the tail & trimming the fins & gills. Lightly season thr fillets with sea salt & black pepper.

Step 2

Pour the olive oil into a pan, or melt your butter, & set on a medium heat on the Infinite Range CombiHob. Once ready, pop your fish in the pan – no need to worry about odours and any vapours escaping as the hob (if using Infinite Range vented) captures all unwanted nasties.  You will want to gently lift the fish using a spatula from time to time, this ensures it won’t stick. Spoon a dash more olive oil onto the fish, flip & then cook the other side.

Step 3

Next step is vegetable prep. Thinly slice the onion, peppers, tomatoes, courgette & carrots, then with your apple cut into thin & long strips.

Step 4

Now add the pre-sliced veg & apple into the same pan as the fish is cooking keeping the trout to one side as the vegetables sauté on the other side. So the veg stays fresh & crisp you will want to lightly stir fry in a little extra oil.

If using an Infinite Range CombiHob’s Dual Flex Zone you will have the option of putting another pan anywhere on the glass to cook the vegetables on their own, the two open cook areas make simultaneous cooking a breeze!

Step 5

Preparing the vinaigrette dressing is simple, just add the mustard, Worcestershire sauce, sherry vinegar and hazelnut oil into a small sauce pan with a pinch of fine salt and white pepper & thoroughly mix prior to serving.

Step 6

Plate up! Arrange the veg & dressing around the centre piece fish delicately & enjoy!
