Who can honestly say they don’t love some rocky road? Gooey chocolate combined with biscuits, nuts and marshmallows to make delicious and easy fridge cakes, loved by kids and adults alike!

So, what is Rocky Road?

It is a very popular type of no-bake slice (or candy bar depending on your location) originating from Australia and New Zealand. They are bars or bakes primarily made of chocolate mixed with marshmallows, nuts, soft sweets (or candy for our American friends!), and sometimes coconut but does vary by country or region.

For example, for us British, Rocky Road tends to be a type of tray bake whereas Australians or Americans serve in individual portions similar to that of a brownie. Americans will also often serve Rocky Road as an Ice Cream flavour which sounds like a match made in heaven if you have a sweet tooth!

Is Rocky Road Vegan?

Unfortunately for our plant based friends, no, classic Rocky Road bars can contain gelatine from animal bones, plus the chocolate used is generally milk chocolate which is obviously a no-go.

Fortunately, the recipe below provided from Der Kern by Miele is a Vegan and cruelty free delicious version of this iconic bake or candy bar.

They are filled with vegan marshmallows, vegan jelly candies, biscuits and all sorts of little delightful treasures rolled into vegan dark chocolate. This vegan rocky road has all the crunch, chew, and flavours of the classic Australian rocky road, the only difference as mentioned above is that it is 100% Vegan friendly, giving you plant based sweet tooth lovers some peace of mind!

Recipe & Method

With chocolate having a low melting point, it can quite easily become gritty and overworked if exposed to higher temperatures. Miele’s steam ovens combat this problem and are ideal for the melting process as the chocolate are kept at precise and consistent temperatures to ensure burning does not occur.

Delicious, Gluten free and Vegan friendly this indulgent rocky road is made using coconut oil, vegan dark chocolate and vegan marshmallows and is ideal for an afternoon tea treat or any other time of the day as they are truly irresistible and once you start you might find yourself having to cook up the next batch!

INGREDIENTS

Serves 4

50g Coconut Oil

250g Vegan dark chocolate

100g Golden Syrup

50g Rich Tea biscuits, broken into pieces

100g Vegan marshmallows, chopped into pieces

50g glace cherries

50g Dried apricots, chopped

50g Pistachios

25g Coconut chips

  • Place the coconut oil, dark chocolate and golden syrup into a solid steam container and cover.
  • Put the mixture in your Miele Steam Oven and heat at 100°C for 5 minutes or until melted then mix well. If you don’t have a Miele Steam Oven, heat the chocolate in a bowl over a saucepan of hot water.
  • Place all of the remaining ingredients into a large bowl and mix.
  • Pour over the chocolate and stir well to coat.
  • Transfer to a greased and lined 20cm square tin and press down well.
  • Place in the fridge for 4 hours or overnight.
  • Sprinkle with icing sugar and cut into squares.

Voila! Now you can sit back and enjoy the fruits of your labour and over indulge in a slice or two of heaven.
