BRUSSELS SPROUTS with Pancetta and Chestnuts – Der Kern by Miele Recipe

The humble Brussel sprout, you either love them or hate them yet we can all agree Christmas Day is not complete without these, what are essentially, mini cabbages on the dinner table, they really are a must have!

Brussel Sprouts are versatile, they can be roasted, steamed, boiled or pan fried & for all of you health conscious fanatics out there, they have impressive nutritional value in terms of their high fibre content, and they are also rich in vitamin C and K. Vitamin K is a group of vitamins that your body needs for blood clotting & helping wounds to heal, also to protect cells and keeping them healthy. Vitamin C is essential on maintaining healthy skin, blood vessels, bones and cartilage as well as helping with wounds to heal also.

When purchasing your sprouts, whether at your local supermarket or farm shop, try to opt for the ones with bright green heads that are firm and heavy for their size with tightly packed leaves avoiding any with signs of yellowing or black spots, this means they have their best days behind them as is an indication of potential fungus.

Another factor to bear in mind in your sprouts size as the smaller the sprout generally means they are generally sweeter and tenderer than larger ones.

With this recipe provided by Miele, the Brussel sprouts flavour is brought to the fore with sweet chestnuts and salty flavoured pancetta. Steaming rather than boiling will preserve the sweet, nutty flavour, while the pancetta and chestnut adds much needed texture. Just be careful with the addition of salt as pancetta is usually pretty salty on its own.

With the chestnuts, it is always a nice touch to buy them fresh to peel and roast yourself, however for convenience these days it is possible to buy your chestnuts pre-prepared especially in the holiday season where they are readily available in most supermarkets.

INGREDIENTS:

  • 1kg Brussels sprouts, sliced into quarters
  • 300g pancetta, cut into cubes
  • 10 chestnuts but into quarters
  • Salt and pepper

Method:

  • Place the Brussels sprouts onto a perforated steam tray. Ideally, steam in a Miele Steam Oven at 100°C for 4 to 5 minutes.
  • Whilst your sprouts are steaming you can gently fry the cubes of pancetta and chestnuts in a large frying pan.
  • Add the steamed Brussels sprouts to the pancetta and fry for 2 minutes. Season to taste & enjoy!
